Salmon and Cauliflower rice that’s filled with Dry Eye fighting nutrients

Want to eat great tasting food and fight dry eye and other eye diseases?

Salmon has a high level of omega-3s and kale has tons of antioxidants. Both great at fighting free radicals that contribute to dry eye. Cauliflower contains sulforaphane that protects the vulnerable tissues of the retinal area from oxidative stress that can result in blindness, cataracts, macular degeneration and more.

Ingredients:

1 cup kale shredded

1/2 small cauliflower

1/2 cup fresh basil

1/4 cup olive oil

2 garlic cloves

2 Tablespoons and 2 Teaspoons Parmesan cheese

2 Tablespoons cup walnuts (chopped)

2 Salmon Fillets cooked by your preference

Directions:

Add cauliflower to a food processor and pulse until the cauliflower looks like rice

Add olive oil to a skillet on medium heat. Add cauliflower and cook until tender. Then set aside.

Add kale, basil, the rest of the olive oil, garlic, cheese and walnuts to a food processor. Blend on high.

Spoon about 1/4 of the pesto into the cauliflower and stir.

Plate the rice and salmon and add the remaining pest to the top of the salmon.
