Roasted Carrots

Try this healthy and simple Thanksgiving side dish. Carrots are an excellent way to get a boost of Vitamin A, which actually plays an important role in vision, bone growth and health of the immune system. Vitamin A also helps the surface of the eye, mucous membranes and skin be effective barriers to bacteria and viruses, reducing the risk of eye infections, respiratory problems and other infectious diseases.

 

Ingredients

  • 2 bunches of small carrots (about 24), peeled
  • 1 tbsp. olive oil
  • 1 tbsp. minced rosemary
  •  salt and pepper

Instructions

1.     Preheat oven to 400ºF. Toss the carrots with olive oil on a rimmed baking sheet. Sprinkle with rosemary, salt & pepper. Bake 20-25 minutes or until tender.
