Quick Fresh Breakfast Quesadilla

It's time for back to school! We all know how crazy it can be trying to make the kids breakfast, get lunches together, and get them to school on time. So here is a quick breakfast that is sure to give them lots of nutrients and give you a stress free morning.

This recipe makes 6 quesadillas and can be prepared before and frozen in a bag or container.

Ingredients:

  • 12 tortillas
  • 3 cups shredded cheese
  • 12 eggs, scrambled
  • 2 cups chopped fresh spinach
  • ½ pound bacon, cooked and crumbled
  • ½ pound ham, diced
  • salt & pepper to taste
  • butter

Layer your ingredients on the tortilla. Warm up the skillet and toss some butter in the pan. Cook for a few minutes on each side. Remove the quesadilla from the pan and slice it in the desired portions. Serve hot or place in a bag or container after it has cooled and freeze it. It will be ready to throw in the microwave or oven for those busy mornings. You can add or replace any of the protein or veggies to change it up a bit.
